Besan is a pulse flour which is prepared by grinding Bengal Gram. The Bengal Gram (known as black chana in local language) is freshly sourced from fields, is then washed and healthy grams are segregated and then processed and broken into 2 pieces. This separates the gram from its black outer covering. The residue is separated from the yellow pulses which are then stone grounded which is the traditional way of grounding grains. Stone grounding adds a characteristic flavour to besan and retains maximum nutrients.
